If anyone is looking for a simple dinner, Peanut Panko chicken is the way to go. They are oven-baked but they taste like they were fried. Crispy and delicious! They don't even need a dipping sauce but sometimes I like to have a jar of sweet red relish to put on them or a honey mustard type sauce.
One Pound of Chicken Fingers
3/4 cup of Panko
3/4 cup Honey Roasted Peanuts
1/2 cup Flour
2 Eggs
1/4 cup Milk
1 Tsp Cayenne Pepper
Pam Cooking Spray
Put the peanuts in your food processor and blend until the are all crushed.
Get three bowls. In one bowl put the flour in. In the second bowl, beat the egg and milk. In the third bowl put your panko and crushed peanuts. Get a cast iron skillet or a baking sheet and spray with a thin coat of Pam.
Dredge each piece of chicken in the flour on both sides. Now coat with egg on both sides. Then cover with the peanut/panko mix. Lay each piece on your cooking pan.

Bake in oven on 350 for 25 to 30 minutes, turning once.
