Peach and Blueberry Galette

So I had a box of pie crusts in the freezer so I took one out last night and put it in the fridge. After I sliced the peaches this morning I took out the dough, opened it and it literally fell apart. So I let it chill out a little and then floured my counter and rerolled it, in case you are wondering how weird my dough looks.


4 Peaches, pared and sliced

1/3 Cup Blueberries

2 Tablespoons Flour

2 Tablespoons Lemon Juice

2 Tablespoons Sugar

1 Tablespoon of Butter


Preheat oven to 425 degrees.

Put sliced Peaches and Blueberries in a bowl. Add Flour, Lemon Juice and Sugar and toss to coat.

Roll out one pie crust and lay it into your baking dish. I used a cast iron pie plate.

Add in the Peach mixture and cut the butter in little pieces and spread around the galette.

Next, carefully fold over the sides of the dough. I also melted a teaspoon of butter and brushed the top of the dough and then sprinkled a small amount of sugar on the dough.

Put in the oven and cook for 15 minutes and then lower the oven to 375 and continue baking until golden brown.
