This is a great one pot meal. If you go to Costco and buy their $5.00 chickens, this is a great meal to make using it. You can make your own biscuit recipe or do like I do and buy a box of Red Lobster Biscuit Mix.
INGREDIENTS:
1/3 cup butter
1/2 cup chopped onion
1/3 cup all-purpose flour
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 can of chicken bouillon
2 1/2 cups shredded cooked chicken
2 cups frozen mixed vegetables, thawed
1 Box Red Lobster Biscuits
RECIPE:
Heat oven to 425°F. In a 9" cast iron skillet, melt butter. Add onions and saute for 3 minutes. Add flour and stir it around good. Next, add milk and canned bouillon.
Add salt and pepper and simmer for a couple of minutes.
Toss in cooked chicken and thawed veggies. Get it all nice and hot cooking on low while you make the biscuits.
Prepare biscuits according to directions on box. Take the skillet off the heat and add biscuits to the top.
Bake on 425 for ~25 minutes or until biscuits are golden brown. The box of biscuits include a little package of herbs that you mix into 3 tbsp of melted butter. So take the skillet out of the oven and brush the butter mixture on top of the biscuits and put back in oven for ~4 minutes. That is it. Easy dinner.
