Roasted Asparagus in Puff Pastry




These were so good and so easy for tonight. I made them as a side dish to go with my steak. The recipe makes 6.



INGREDIENTS:


1 Package of Puff Pastry (1/2 a box)

1 Package of Fresh Asparagus

2 Oz. Cream Cheese, softened

1/4 Cup fresh grated Parmesan

2 Garlic Cloves

Olive Oil

One Egg


RECIPE:


Start by roasting the Asparagus. Rinse the veggies and cut off the ends. Then cut the stems in half. On a roasting pan, add a little olive oil. Put in the asparagus and mix them well so they are all oiled. Add salt & Pepper and 2 pieces of garlic. Bake on 375 for 20 minutes, stirring once. Let cool.





Put egg in a small bowl and beat. This will be brushed on the pastry.


Scatter a little flour on your clean work surface. Lay out your puff pastry. Using a rolling pin just roll it out so that it is flat. Cut pastry in 6 even pieces. Also, divide your asparagus in 6 equal portions.




To each piece of pastry, spread a little cream cheese. Then lay out some asparagus. Top with fresh grated Parmesan Cheese. Fold one end of pastry over and add a little bit of egg by using a brush. Fold over the other end and press down. Brush egg mix all along the top. Top with a little grated cheese.


Bake on 375 for about 20 minutes or until browned.
