Orange Coconut Macaroons



I love Macaroons but since I made these one time I keep going back to the orange flavored ones. These are delicious. Best to keep refrigerated before eating and maybe take them out about 15 minutes before eating. Last about 3-4 days in the fridge. I don't leave them out because of the eggs. I got 24 cookies using this recipe.


INGREDIENTS:


1/2 cup sugar

1 Tbsp orange zest

2 Eggs

2 Tbsp butter, melted

2 Tbsp orange juice

1/2 tsp vanilla extract

1/4 tsp salt

4 1/2 cups shredded coconut


RECIPE:



Get all your ingredients together and preheat oven to 350 degrees.



Mix sugar and orange zest together. Add in eggs and melted butter. Mix until well combined.



Add in orange juice, vanilla extract, and salt. Mix.



Add in shredded, sweetened coconut, and mix until all the coconut is combined.



With a small cookie scoop or two spoons, scoop the macaroons into 1" balls. Place on a cookie tray with parchment paper.



Bake for about 15-17 minutes, or until macaroons are lightly golden brown. Keep your eye on them and when you see the tops are browned, get them out. I usually do them in two batches rather than have one cookie tray on the bottom.



I let them cool on a wire rack and then I put them in the fridge uncovered for awhile until completely cooled so no moisture occurs if you use saran wrap to cover.
