This is such a delicious dessert and so easy to make.
1/2 cup sugar
1 Tbsp orange zest
2 Tbsp butter, melted
2 Tbsp orange juice
1/2 tsp vanilla extract
1/4 tsp salt
4 1/2 cups shredded coconut
Preheat oven to 350 degrees.
Mix sugar and orange zest together in mixing bowl by hand. Add in eggs and melted butter. Mix until well combined.
Add in orange juice, vanilla extract, and salt. Mix.
Add in the shredded sweetened coconut, and mix until all the coconut is combined.
With a small cookie scoop or two spoons, scoop the macaroons into 1" balls. Place on cast iron skillet sprayed with Baker's Joy.
Bake for about 20-22 minutes, or until macaroons are lightly golden browned.
