Macless Cauliflower & Cheese with Ham


A good alternative for a hot side dish. If you close your eyes, you would think you were eating Macaroni & Cheese. A healthy option and so good. If you aren't xcrazy about Ham, just omit it and enjoy without it.




INGREDIENTS:


One Ham Steak, grilled and diced

Kosher salt

1 large head cauliflower, cut into small florets

Pam

1 1/4 cup heavy cream

2 ounces cream cheese, cut into small pieces

1 1/2 teaspoons Dijon mustard

2/3 cup shredded sharp Cheddar, plus 1/2

cup for topping the casserole

2/3 Monterrey Jack Cheese, grated

1/4 cup Parmesan grated

1/4 Cup Mozzerella grated

1/4 teaspoon freshly ground black pepper

1/8 teaspoon garlic powder





Preheat oven to 375.


Boil Cauliflower in hot water for about 10 minutes. Spray cast iron skillet with pam or vegetable oil spray. Drain cauliflower really well and pat between several layers of paper towels to dry. Transfer the cauliflower to the skillet.

Add the diced ham and gently mix and set aside.

Bring the cream to a simmer in a small saucepan, and whisk in the cream

cheese and mustard until smooth. Stir in the rest of the cheese (saving some for the top), along with the salt, pepper and garlic and whisk just until the cheese melts, about 1 to 2 minutes. Remove from heat, pour sauce over the cauliflower and gently stir to combine. Top with the remaining cheese and bake until browned and bubbly hot, about 20 minutes. Done.
