Okay.....this is a little crazy but I was dying to know if it would look like a ham and I just had to try it. It tasted okay but weird. Served with Lime & Feta Cheese.
Using a knife, remove outer skin off of the watermelon. Trim and cut the watermelon top into squares not going all the way through to the bottom. In a bowl mix the Juice of 2 limes, 1/2 cup honey, zest of 1 lime and 1 TBSP of Extra Virgin Olive Oil.
Brush watermelon with glaze. I put it in the oven on 225 for 1/2 an hour, raised it to 375 for 15 minutes, then I blasted it all over with pam and broiled for ~10 minutes.
