Greek Style Pasta Salad

This is a great salad that will last for about 3 or 4 days. Healthy and delicious! I went to Home Goods and picked up a bag of Butterfly shaped pasta.


16 ounces veggie pasta

1 Cucumber, diced

1 Bell Pepper, diced

1 Red Onion, Diced

4 oz. Feta Cheese, crumbled

1/2 Cup Pitted Greek Olives

For the Salad Dressing:

1/4 Cup Red Wine Vinegar

!/3 Cup Olive Oil

1/2 Teaspoon Garlic Powder

1 Teaspoon Oregano

Salt and Pepper, to taste


Whisk together Salad Dressing ingredients and put to the side.

Cook Pasta el dente and rinse under cold water. Combine all other ingredients in with the pasta.

Add dressing and toss. Refrigerate at least 2 hours before serving.
