Chipotle Bowls



I like to make these bowls up for dinner so I have them for a couple of nights. Then each night, I only have to heat the bowl up a little bit in the microwave and then cut up and toss some fresh veggies to the bowl.



For 4 bowls, I use:


3 chicken breasts: Brush each with oil, add salt & pepper, a little cajun seasoning and a little tab of butter & bake on 375 ( turning once) for about 25 minutes, or until cooked.


Make one cup of rice: I use plain white rice but I chop up some fresh cilantro and the juice of 1/2 a lime and put both right into the rice water after the water boils, stir, cover, and put on low).


Open one can of corn and drain. Open one can of black beans, rinse and drain. When the chicken is done, I cut it up and divide it into 4 bowls. Then I add the cooked rice to each of the 4 bowls and divide the corn & beans up too. Then I cover the 3 bowls and the 4th one I have for dinner.



For dinner: To the heated chicken bowl, I add:


Fresh chopped tomato, 1/2 of a chopped avocado, diced red onion, sliced green onions, a big scoop of sour cream and pour some salsa over it all. Mix and enjoy!
