I had never made a Carrot Cake before so I finally made one for my son. After googling for what seemed hours, I finally decided on one from the Southern Living website.
The ingredients are basic enough and include coconut, carrots, buttermilk and pecans.
So this is a three layer cake. You mix up all the ingredients and then bake for 25 minutes. While they are cooking, you make a Buttermilk Glaze in a Dutch Oven.
The glaze only cooks for about 5 minutes. Once the cakes come out of the oven, you pour the glaze right over the cakes while they are still in the pans. The glaze then seeps into the layers and give your cake that extra layer of goodness.
Then you make your Cream Cheese Frosting and start layering.
