Blackened Shrimp Stuffed Artichoke




Just a different take on a regular stuffed artichoke. The Shrimp are like little gifts from the sea


For each artichoke: Mix about a cup of breadcrumbs, 3 mushrooms diced, 1/2 small onion diced, some red pepper flakes, 3 cloves garlic diced and Italian Parsley, salt & pepper. Mix with olive oil and salt & pepper so that the mixture is a little damp.



Cut off the bottom stem of the artichoke so it sits flat. Trim the top of each leaf to remove the spikes. Starting at the bottom, stuff the mixture into the leaves. In a pot, add about 2 inches of water and sit the artichoke in it (like my pic) and bring to a boil.



Cover and put on low. Every 15 minutes check the water level and replace water as needed. Takes about 1 hour and 15 minutes. You will see the artichoke start to bloom open. Test one of the leaves and see if it is soft. When it is ready, I quickly blacken the shrimp and randomly lay them inside the artichoke.



Buy 4 cooked shrimp and blacken them. I just sprinkle cumin, cayenne pepper, chili powder, basil, brown sugar, both onion & garlic powders on the shrimp and let them sit out for a little while to marinate. Then I just toss them in a cast iron skillet for a minute right after the artichokes are done.
