Mashed Potato Cakes With Egg

This potato cake is so delicious. Great for a side dish or just a Vegetarian meal.

Here is a picture before the egg.

Just boil 2 potatoes, dice 2 scallions, fry 3 slices of bacon and save the grease, 3 T of Panko and about a T of butter. Break up the bacon and put it all in a bowl and mix it up. Don't use a mixer because they will be too mashed. Then just make 2 big balls, put them on parchment paper and pat it down. Then, using the bottom of a glass, make an indentation in the center. Refrigerate 2 hours.

Bake on 350 for about 20 minutes and take it out and add an egg to the center and bake another 5 minutes. That's it.
