Duck Leg Gyros





I saw someone eating gyros last night and I couldn't sleep because they looked so good and I couldn't stop thinking about them. So right before I fell asleep, I took out 2 duck legs I had in the freezer and put them in the fridge. This is served with tomatoes, feta, red onions, kalamata olives on warm pita with tzatziki sauce.




Ingredients:


2 duck legs

2 scallions, minced

2 garlic cloves, minced

2 Tbsp balsamic vinegar

2 Tbsp Greek honey

1 1/2 Tbsp soy sauce

½ orange, zested and juiced


Recipe:


Place duck legs in freezer bag. Mix all of the above and pour into the freezer bag over the duck legs and coat well. Rest overnight in the fridge.



Preheat the oven to 350 F.


Pour an inch of water into your baking dish.

Place skin side up duck legs on top of a metal rack. Don't let the meat touch the water. Reserve marinade.



Bake for about 45-50 minutes, basting the duck every 10-15 minutes with the marinade and turning the duck legs over once in awhile. When the duck legs are 10 minutes away from being cooked, wrap up your pita bread in aluminum foil and leave it in your oven for the last ten minutes of the cook. When the duck is cooked and golden brown, season the skin liberally the skin with salt & pepper.



Remove your pitas from the oven and keep them hot in the foil and then turn the oven on broil and cook the duck legs for 5-10 minutes or until the skin is crispy.
